    *This dish is vegan when prepared exactly as directed.If preferred, you may use canola or olive oil in place of coconut oil.I strongly advise choosing a very light olive oil if you intend to replace the olive oil, since the flavour will come through in the finished result. *Regular almond milk or unsweetened vanilla almond milk will work. * Any fat percentage from cow’s milk will do if you’d like, but keep in mind that doing so would make the muffins less dairy- and vegan-free.For this dish, using ripe or overripe bananas is crucial.I do not advise omitting the oil completely as this would make the muffins spongy and ugly.Pick a vegan granola if you want or need the muffins to be vegan.
